
Sunday Kevin went to the mountain while I grocery shopped for our Sunday feast. Every Sunday we try to cook something that we normally wouldn't have time to make during the week. Most Sundays we do a roast of some sort but I had cooked some butternut and acorn squash earlier in the week that we hadn't eaten so we decided to make Butternut Squash, Sage, and Goat Cheese Ravioli. The recipe sounded delicious, however it called for using won-ton wrappers and I just couldn't bring myself to do that so first we had to make our own dough. I've never made dough before but it was so easy I'll always make my own from now on! We used our food processor (a wedding shower gift from Mary and Bill, thanks again we love it!) and mixed flour, salt, butter and water and Kevin kneaded and rolled out our dough.
I mixed the squash, goat cheese, sage and various spices together and we had enough filling for a few hundred ravioli!
We only ended up using about 1/4 of that bowl and we froze the rest so we can make more anytime! Lily watched the entire process hoping for a nibble of something good...
We ended up making a huge mess, and some pretty delicious ravioli!
Unfortunately I was so focused on eating them, I forgot to take a picture of our final product! But it looked something like this...

After we made the raviolis and before we cooked we decided to make our way to New Hampshire to get our new TV! What should have been a 45 minute drive turned into an hour and a half trek when we hit some snow and major patches of black ice on the highway. We sat idle for about a half hour when we drove up on 5 accidents in a two mile stretch! Two of the accidents were really awful, one car had flipped over multiple times and was crushed completely. I hope whoever was in those cars is ok, it was a scary sight. Kevin would like me to point out that ALL the accidents except for one, were cars with Massachusetts plates and people from Mass drive way too fast!! They really do, we have tons of "Mass-holes" who have ski houses near us and they come up here and drive like maniacs on snow and ice. Slow down people!!!

Anyway... we finally made it to Best Buy. We ended up getting a 32' LCD HD Flat screen TV for a great price! Kevin negotiated us an amazing deal on a floor model TV that was brand new, just out of the box and we got it for much less than the exact same TV in the box. We saved so much money that he even agreed to get a wireless router, ya!
I am so excited about the wireless router we went home and I set it up straight away. Actually it took about 45 minutes on the phone with tech support in India who I could barley understand, but now I can surf the Internet or play online scrabble anywhere in the house! What's also great about our new TV is we can plug my laptop into the TV and look at photos or surf the web on the big screen! The TV is not actually hooked up yet, we have to trade in our digital cable box today for a HD cable box, but we'll set everything up tonight and have a photo for tomorrow!
Well it's back to work for me. I'll have a 16 week baby update tomorrow and some "bump watch" photos coming soon as well. Have a great week!
